Our Agave Nectar

We at Margarita Sensations began with the idea of producing the finest all natural and organic Margarita Mixes available anywhere in the world.  That in itself is a bold statement, but we have always believed in doing things the right way with quality as our measuring stick.  We knew from an extensive background and knowledge in the Food and Beverage industry that we wanted to incorporate Agave Nectar in our Mixes and in the base for our premium gourmet margaritas.  We were aware that although there are many species of Agave, the Weber Blue Agave is of the highest quality available.  Since the finest Tequilas are made with 100% Weber Blue Agave, it only made sense that to have  the finest Margaritas, we needed to find an Agave Nectar that only came from the Weber Blue Agave.

agave nectarThen the question of where do you go to find the right Agave Nectar?  Our passion led us to all of the local Health Food stores, Organic Supermarkets, on-line stores and finally to Mexico where we visited the main plants that produce Agave Nectar.  Furthermore, we were dedicated to finding an Agave Nectar that was 100% Organic and Kosher.

We knew from experience that we wanted to find the highest quality "Clear" Agave Nectar to use in his Margarita Mixes and his gourmet margaritas.  When asked "why do we want to use a clear Agave Nectar instead of the Amber colored Agave Nectar" the answer was two-fold.  First, we learned that using a Clear Agave Nectar it will mix with the any flavor naturally without creating any sort of an aftertaste like some find when using honey or the darker Agave Nectars.  Second was the fact that a clear Agave Nectar is more truly a "Raw" product.  It is cooked at a lower temperature (Under 108 degrees Fahrenheit) for a longer period of time.  This process is far more costly, but; does not cause the natural fructose that is secreted within the piña of the Agave to caramelize, which changes the color and the flavor of the nectar.

In the town of Jalisco, Mexico we found a family who grew their own Organic Agave Nectar and have been producing Agave Nectar for many years.  We found that this "Family" run business was comprised of warm-hearted individuals who worked tirelessly.  This family of farmers have the utmost respect for their land and for the crops that they grow.  We noticed the passion and pride they all have in their Agave Fields and in the rest of the crops they produce.  They are dedicated to farming using only organic practices and in employing organic methods in everything they grow.  These are the same qualities and characteristics that we have in our own products and in each other.  It was then that we knew we had finally found what we were searching for.

Our Raw Blue Agave Nectar is produced in a town in Jalisco. Our Agave Nectar is extracted purely from the Blue Agave Tequilana Weber variety. This particular type of Agave nectar fits our flavor profile perfectly in the fact that it is full of minerals which are present due to the lack of processing our Agave nectar goes through. Margarita Sensations Clear Blue Agave Nectar is made exclusively from the world-renowned Tequilana Weber Blue Agave plant.  The Weber Blue Agave variety is higher in fructose-producing carbohydrates than other types of Agave, and is considered to be the finest Agave in the world.  

Our Agave Nectar is extracted from the piña or the heart of the Blue Agave. First, the leaves of the Agave plant are stripped off and the core is crushed to separate out the juice. The core is subjected to a gentle milling process, which proceeds slowly in order to preserve every nutritional aspect of the juice. Only small quantities of the precious juice are processed in each batch using this method. Once the juice is separated from the pulp, the temperature is increased to 108°F and the pH is adjusted to break down the long chain inulins into fructose. Now the resulting juice is subjected to an evaporative process to increase the sweetness while maintaining its pure flavor.

Using Agave Nectar

Agave Nectar is less viscous than honey, and it has a stable three-year shelf life.  It does not crystallize or solidify when cold, pouring and dissolving easily and evenly even in cold liquids.  Because it has excellent moisture retaining properties, it is ideal for creating breads and baked goods with a light and fluffy texture; it also works to keep them fresher for a longer period of time.

Agave Nectar can be used straight out of the bottle to sweeten teas, coffee, lemonade, and other beverages, and it is a delicious topping for pancakes, waffles, french toast or your favorite hot or cold breakfast cereal.  And “wow”, does it make the best Margaritas on the Planet!

When adapting a recipe to use Agave Nectar, reduce the other liquids by one-third (1/3).  When replacing table sugar, plan on using 25% less Agave Nectar to achieve the same level of sweetness; for example, use ¾ cup of Agave Nectar for every cup of sugar.  Use it 1:1 to replace honey in reccipes.  Also, baked goods with Agave Nectar will brown more quickly, so reduce your oven temperature by 25° F to avoid burning.
